Warming, comforting lentils with sweet potatoes and creamy coconut milk.


  • 3 tablespoons Coconut Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Fennel Seed
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Garam Masala
  • 2 Yellow Onions (Chopped)
  • 2 tablespoons Fresh Ginger (Finely Chopped)
  • 3 Garlic Cloves (Grated)
  • 1 can Chicken Broth
  • 1 can Coconut Milk
  • 16oz Lentils
  • 4oz White Mushrooms
  • 2 Sweet Potatoes (Chopped into 1-inch pieces)
  • 1 Lemon
  • Salt and Pepper (To Taste)
  • 1 bunch Cilantro (Optional) (Chopped)


Step 1
Prepare the vegetables. Peel and chop the sweet potatoes into 1 inch pieces, and set aside. Break off 1 inch of the ginger root and finely chop, grate the garlic and set aside. Slice the mushrooms and chop the onions. For the cilantro (optional): chop the cilantro and separate the stems and the leaves.
Step 2
Heat a medium to large skillet over medium heat. Toast the spices (fennel seed, cumin, turmeric, cayenne and garam masala) in the coconut oil until fragrant.
Step 3
Add in the ginger, garlic, onion and cilantro stems. Sautée until the onions are soft. Take out half of this onion mixture and reserve.
Step 4
Add in the mushrooms and the sweet potatoes. Incorporate them into the remaining onion/spice mixture, then add the lentils and stir.
Step 5
Add in the chicken broth and the coconut milk. Fill the emptied coconut milk can with water and add the water to the lentil mixture. Stir until well incorporated, cover and simmer for about 20 minutes or until lentils are tender.
Step 6
Uncover and stir. The mixture should be thickened. Salt to taste and top with the reserved onion mixture.
Step 7
Serve hot. Garnish with a squeeze of lemon and the chopped cilantro leaves (optional).
